Herring and sardine rice!

Hello friends!

Today I share a recipe that I thought of a few days ago. One of those fusions that ends up as tasty as we think it them.

I had already shared the recipes for herring rice  and sardine rice. Both recipes are an important part of Dominican history. Sardines and herring (along codfish) have been very popular due to their low costs and high nutritional value.

For 6 people.

Ingredients

  • 4 cups rice
  • 4 cups water
  • 2 tbsp. Garlic paste.
  • 1 1 lb. packet herring fillets
  • 1 can sardines.
  • 1 tbsp. tomato paste.
  • 1 tbsp. olives.
  • 1 large onion.
  • 1 cubanela pepper
  • Chives, cilantro, coriander and salt.
  • 1 bouillon cube.
  • 1 tbsp. saffron.

Directions

Make a soffrito with all ingredients (except the herring and sardines), add half the packet of herrings and just the sardine sauce. Allow to cook a bit, then add the water. When it starts to boil add the rice y keep stirring until it dries off. When it does, add the other half of the herrings and the sardines, distribute well the sardines and herrings along the rice, lower the fire and allow to cook at the lowest fire for half an hour.

 Traditionally we have it with stewed beans and avocado. Enjoy!
